Ingredients

  • 4 pieces chicken breasts
  • 1/2 cup orange juice
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 1/4 cup fresh mint
  • 1/2 small red onion
  • 1 medium cucumber

Instructions

  1. In a bowl, whisk together the orange juice, lemon juice, olive oil, minced garlic, salt, and black pepper.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 1 hour, or overnight for best flavor.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and discard the marinade.
  5. Grill the chicken for 6-8 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C).
  6. While the chicken is grilling, combine the parsley, cilantro, mint, red onion, and cucumber in a large bowl.
  7. Once the chicken is done, let it rest for a few minutes before slicing.
  8. Serve the grilled chicken on a plate and top with the fresh herb salad.
