A flavorful grilled chicken dish marinated in citrus juices and served with a refreshing fresh herb salad.

- 4 pieces chicken breasts
- 1/2 cup orange juice
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 2 cloves garlic
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley
- 1/4 cup fresh cilantro
- 1/4 cup fresh mint
- 1/2 small red onion
- 1 medium cucumber
Instructions
- In a bowl, whisk together the orange juice, lemon juice, olive oil, minced garlic, salt, and black pepper.
- Place the chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 1 hour, or overnight for best flavor.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for 6-8 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C).
- While the chicken is grilling, combine the parsley, cilantro, mint, red onion, and cucumber in a large bowl.
- Once the chicken is done, let it rest for a few minutes before slicing.
- Serve the grilled chicken on a plate and top with the fresh herb salad.
Notes
- You can adjust the citrus juices based on your preference.
- Feel free to add additional vegetables to the herb salad for extra flavor.
