Description

Delicious cinnamon sugar pumpkin muffins that are moist and fluffy. Perfect for breakfast or a snack.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, mix melted butter, granulated sugar, and brown sugar.
  4. Add pumpkin puree, eggs, vanilla extract, and milk. Stir until smooth.
  5. Gradually fold dry ingredients into wet ingredients until just combined.
  6. Fill muffin cups 3/4 full with batter.
  7. Mix sugar and cinnamon for topping. Sprinkle over muffins.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool in pan for 5 minutes, then transfer to a wire rack.

Notes

  • Use fresh pumpkin puree for best results.
  • Do not overmix the batter to keep muffins fluffy.
  • Store in an airtight container for up to 3 days.
