- 1/2 cup granulated sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
- Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
- In a small bowl, combine the 1/2 cup of granulated sugar with additional ground cinnamon (if desired) for rolling.
- Bake for 12-15 minutes or until edges are lightly golden. Remove from the oven and let cool slightly.
- While still warm, roll each cookie in the cinnamon sugar mixture until fully coated.
- Allow cookies to cool completely on a wire rack before serving.
Notes
- For extra flavor, consider adding a pinch of nutmeg to the sugar mixture.
