Ingredients

- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 1/4 cup granulated sugar
- 1 tablespoon ground cinnamon
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
Instructions
- Preheat your oven to 325°F (163°C).
- Mix graham cracker crumbs, melted butter, 1/4 cup sugar, and cinnamon for the crust.
- Press the crust mixture into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then let it cool.
- Beat the cream cheese and 1 cup sugar until smooth.
- Add eggs one at a time, mixing after each addition.
- Mix in the vanilla extract and sour cream.
- Pour the filling over the cooled crust.
- Bake for 50-60 minutes until the center is set.
- Let the cheesecake cool completely before refrigerating for at least 4 hours.
Notes
- Use room temperature ingredients for a smoother filling.
- Run a knife around the edge of the pan after baking to prevent cracking.
- Chill the cheesecake overnight for best results.
