These festive nachos are perfect for a Cinco de Mayo party, loaded with cheese, fresh toppings, and a delicious homemade salsa.


Ingredients

  • 1 bag of tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels, drained
  • 1 jalapeño, sliced
  • 1 avocado, diced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream
  • 1 lime, cut into wedges
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spread half of the tortilla chips on a large baking sheet.
  3. Sprinkle half of the shredded cheese over the chips.
  4. Add half of the black beans, corn, and jalapeño slices on top.
  5. Layer the remaining chips and top with the remaining cheese, black beans, corn, and jalapeños.
  6. Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and top with diced tomatoes, avocado, and cilantro.
  8. Serve immediately with sour cream and lime wedges.

Notes

  • Feel free to customize the toppings with your favorites like guacamole, fresh salsa, or different types of cheese.
  • For extra spice, add diced serrano peppers or a drizzle of hot sauce.
