These festive nachos are perfect for a Cinco de Mayo party, loaded with cheese, fresh toppings, and a delicious homemade salsa.

- 1 bag of tortilla chips
- 2 cups shredded cheddar cheese
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels, drained
- 1 jalapeño, sliced
- 1 avocado, diced
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1/4 cup sour cream
- 1 lime, cut into wedges
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Spread half of the tortilla chips on a large baking sheet.
- Sprinkle half of the shredded cheese over the chips.
- Add half of the black beans, corn, and jalapeño slices on top.
- Layer the remaining chips and top with the remaining cheese, black beans, corn, and jalapeños.
- Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with diced tomatoes, avocado, and cilantro.
- Serve immediately with sour cream and lime wedges.
Notes
- Feel free to customize the toppings with your favorites like guacamole, fresh salsa, or different types of cheese.
- For extra spice, add diced serrano peppers or a drizzle of hot sauce.
