- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract

- 1/2 cup granulated sugar (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
- Add the egg and vanilla extract, and mix until well combined.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, combine the cinnamon and 1/2 cup of granulated sugar for the coating.
- Scoop tablespoon-sized portions of the dough and roll them into balls.
- Roll each ball in the cinnamon-sugar mixture until fully coated.
- Place the coated cookie balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For an extra cinnamon flavor, you can add more cinnamon to the sugar coating.
- Make sure not to overbake the cookies; they will continue to cook slightly as they cool.
