Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, and mix until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a small bowl, combine the cinnamon and 1/2 cup of granulated sugar for the coating.
  7. Scoop tablespoon-sized portions of the dough and roll them into balls.
  8. Roll each ball in the cinnamon-sugar mixture until fully coated.
  9. Place the coated cookie balls on the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake for 10-12 minutes, or until the edges are lightly golden.
  11. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra cinnamon flavor, you can add more cinnamon to the sugar coating.
  • Make sure not to overbake the cookies; they will continue to cook slightly as they cool.
