- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract

- 1 package (8 oz) cream cheese, softened
- 1/4 cup powdered sugar
- 2 tablespoons milk

Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In another bowl, beat together the cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.
- Scoop a tablespoon of cookie dough and flatten it slightly in your palm. Place a teaspoon of the cream cheese filling in the center, then fold the dough around the filling, rolling it into a ball.
- Roll the ball in the cinnamon-sugar mixture (1/4 cup granulated sugar and 1 tablespoon ground cinnamon) and place on the prepared baking sheet.
- Repeat with the remaining dough and filling, spacing the cookies about 2 inches apart on the baking sheet.
- Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a more intense churro flavor, you can increase the amount of cinnamon in the dough.
