Description

These delightful churro cheesecake cookies combine the flavors of classic churros with a creamy cheesecake filling, making them the perfect treat for any occasion.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract (for filling)
  • 1/4 cup granulated sugar (for rolling)
  • 1 tablespoon ground cinnamon (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In another bowl, beat together the cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.
  7. Scoop a tablespoon of cookie dough and flatten it slightly in your palm. Place a teaspoon of the cream cheese filling in the center, then fold the dough around the filling, rolling it into a ball.
  8. Roll the ball in the cinnamon-sugar mixture (1/4 cup granulated sugar and 1 tablespoon ground cinnamon) and place on the prepared baking sheet.
  9. Repeat with the remaining dough and filling, spacing the cookies about 2 inches apart on the baking sheet.
  10. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a more intense churro flavor, you can increase the amount of cinnamon in the dough.
  • These cookies are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 3 days.
