- 3–4 lbs chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, chopped
- 3 potatoes, cubed
- 2 cups beef broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- Heat olive oil in a large pot over medium-high heat.
- Season the chuck roast with salt and pepper, then sear it in the pot until browned on all sides.
- Add onions and garlic, cooking until softened.
- Stir in carrots and potatoes.
- Pour in beef broth, thyme, and rosemary.
- Cover the pot and transfer it to the oven.
- Cook for 3-4 hours or until the meat is tender.
- Remove from the oven and let it rest for 10 minutes before serving.
