- 3–4 lbs chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 carrots, chopped
- 2 potatoes, cubed
- 2 teaspoons dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- Heat olive oil in a large pot over medium-high heat.
- Season the chuck roast with salt and pepper, then sear it on all sides.
- Add onion and garlic, and sauté until fragrant.
- Pour in the beef broth, then add carrots, potatoes, and thyme.
- Bring to a simmer, cover, and transfer to the oven.
- Cook for 3-4 hours, or until the meat is tender.
- Remove from oven and let rest before slicing.

- Adjust the seasoning to your taste.
- You can add other vegetables if desired.
- This recipe can be made in a slow cooker as well.
