  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 carrots, chopped
  • 2 potatoes, cubed
  • 2 teaspoons dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Heat olive oil in a large pot over medium-high heat.
  3. Season the chuck roast with salt and pepper, then sear it on all sides.
  4. Add onion and garlic, and sauté until fragrant.
  5. Pour in the beef broth, then add carrots, potatoes, and thyme.
  6. Bring to a simmer, cover, and transfer to the oven.
  7. Cook for 3-4 hours, or until the meat is tender.
  8. Remove from oven and let rest before slicing.
