  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, chopped
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the chuck roast with salt and pepper.
  3. Sear the roast on all sides until browned.
  4. Transfer the roast to the crockpot.
  5. Add chopped onion, garlic, carrots, and potatoes around the roast.
  6. Pour beef broth and Worcestershire sauce over the ingredients.
  7. Add thyme and rosemary.
  8. Cover and cook on low for 8 hours or high for 4 hours.
  9. Check for tenderness and adjust seasoning if needed.
  10. Serve hot with vegetables.
