Description
A simple and delicious chuck roast recipe made in a crockpot.
Ingredients

- 3–4 lbs chuck roast
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, chopped
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Season the chuck roast with salt and pepper.
- Sear the roast on all sides until browned.
- Transfer the roast to the crockpot.
- Add chopped onion, garlic, carrots, and potatoes around the roast.
- Pour beef broth and Worcestershire sauce over the ingredients.
- Add thyme and rosemary.
- Cover and cook on low for 8 hours or high for 4 hours.
- Check for tenderness and adjust seasoning if needed.
- Serve hot with vegetables.
Notes
- For extra flavor, marinate the roast overnight.
- Feel free to add other vegetables like celery or mushrooms.
- Leftovers can be stored in the refrigerator for up to 3 days.
