  • 4 carrots, chopped
  • 4 potatoes, quartered

  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the chuck roast with salt and pepper.
  3. In a large oven-safe pot, heat olive oil over medium-high heat.
  4. Brown the roast on all sides, then remove from the pot.
  5. Add onion and garlic to the pot, sauté until softened.
  6. Add carrots and potatoes, stir for a few minutes.
  7. Return the roast to the pot.

  9. Cover the pot and transfer to the oven.
