Ingredients

- 3–4 lbs chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, cubed
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Season the chuck roast with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the roast on all sides until browned.
- Transfer the roast to a slow cooker.
- Add onion, garlic, carrots, and potatoes around the roast.
- Pour beef broth and Worcestershire sauce over the ingredients.
- Sprinkle thyme on top.
- Cover and cook on low for 8 hours or until tender.
- Slice and serve with vegetables and broth.

- For extra flavor, marinate the roast overnight.
- Use fresh herbs for better taste.
