- 3 to 4 pounds chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, cubed
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Fresh herbs (thyme, rosemary) for garnish
Instructions
- Preheat your oven to 325°F (163°C).
- Season the chuck roast with salt and pepper.
- Heat olive oil in a large oven-safe pot over medium-high heat.
- Sear the roast on all sides until browned.
- Remove the roast and set aside.
- Add onions and garlic to the pot; sauté until soft.
- Add carrots and potatoes, mixing well.
- Pour in beef broth and Worcestershire sauce.
- Return the roast to the pot; cover with a lid.
- Bake in the oven for 3 to 4 hours, until tender.
