Description
A simple and delicious chuck roast recipe made in a crock pot.
Ingredients

- 3–4 pounds chuck roast
- 1 tablespoon olive oil
- 2 cups beef broth
- 1 onion, chopped
- 4 carrots, sliced
- 4 potatoes, diced
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Brown the chuck roast on all sides.
- Transfer the roast to the crock pot.
- Add beef broth, onion, carrots, potatoes, garlic, salt, pepper, thyme, and rosemary.
- Cover and cook on low for 8 hours or high for 4 hours.
- Check for tenderness before serving.
Notes
- Adjust seasoning to taste.
- Serve with crusty bread.
- Leftovers can be stored in the fridge for up to three days.
