Ingredients

- 3 to 4 pounds chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, cubed
- 2 cups beef broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Preheat your oven to 275°F (135°C).
- Season the chuck roast with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Brown the roast on all sides, then remove it from the skillet.
- Add onion and garlic to the skillet, cooking until softened.
- Place the roast in a roasting pan and surround it with carrots and potatoes.
- Pour the beef broth over the roast and add thyme and rosemary.
- Cover the pan with foil and bake for 3-4 hours.
- Check for tenderness; the roast should easily pull apart with a fork.
- Let it rest for 10 minutes before slicing.
Notes
- For added flavor, marinate the roast overnight.
- Adjust vegetables based on your preference.
- Leftovers can be stored in the refrigerator for up to 3 days.
