  • 4 carrots, sliced
  • 4 potatoes, cubed
  • 2 cups beef broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 275°F (135°C).
  2. Season the chuck roast with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Brown the roast on all sides, then remove it from the skillet.
  5. Add onion and garlic to the skillet, cooking until softened.
  6. Place the roast in a roasting pan and surround it with carrots and potatoes.
  7. Pour the beef broth over the roast and add thyme and rosemary.
  8. Cover the pan with foil and bake for 3-4 hours.
