Ingredients

  • 1 prime rib roast (57 pounds)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 cup beef broth

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a small bowl, mix garlic, olive oil, salt, pepper, rosemary, and thyme.
  3. Rub the mixture all over the prime rib roast.
  4. Place the roast in a roasting pan, fat side up.
  5. Pour beef broth into the bottom of the pan.
  6. Roast for 20 minutes, then lower the temperature to 325°F (163°C).
  7. Continue roasting until the internal temperature reaches 135°F (57°C) for medium-rare.
  8. Remove from the oven and let it rest for 15-20 minutes before slicing.
