A delicious and tender Christmas prime rib roast, perfect for festive gatherings.
Ingredients

- 1 prime rib roast (5–7 pounds)
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons salt
- 1 tablespoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 cup beef broth
Instructions
- Preheat your oven to 450°F (232°C).
- In a small bowl, mix garlic, olive oil, salt, pepper, rosemary, and thyme.
- Rub the mixture all over the prime rib roast.
- Place the roast in a roasting pan, fat side up.
- Pour beef broth into the bottom of the pan.
- Roast for 20 minutes, then lower the temperature to 325°F (163°C).
- Continue roasting until the internal temperature reaches 135°F (57°C) for medium-rare.
- Remove from the oven and let it rest for 15-20 minutes before slicing.

- Adjust cooking time based on the size of the roast.
- Use a meat thermometer for accuracy.
