  • 1/2 cup raisins

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the grated carrots, sugar, and brown sugar.
  3. Add the vegetable oil and eggs, mixing well.
  4. In another bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Fold in the walnuts, raisins, and vanilla extract.
  7. Pour the batter into a greased cake pan.
  8. Bake for 40-45 minutes or until a toothpick comes out clean.
  9. Let the cake cool before serving.
