- 2 cups grated carrots
- 1 cup sugar
- 1 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup chopped walnuts
- 1/2 cup raisins
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the grated carrots, sugar, and brown sugar.
- Add the vegetable oil and eggs, mixing well.
- In another bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Fold in the walnuts, raisins, and vanilla extract.
- Pour the batter into a greased cake pan.
- Bake for 40-45 minutes or until a toothpick comes out clean.
- Let the cake cool before serving.
Notes
- Can be frosted with cream cheese icing.
- Store in an airtight container for up to a week.
- Add more spices for a stronger flavor if desired.
