Ingredients
- Eggs – 12
- Milk – 1 cup

Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, whisk together eggs and milk.
- Add salt and pepper to the egg mixture.
- In a skillet, heat olive oil and sauté spinach and cherry tomatoes until soft.
- Mix the cooked spinach and tomatoes into the egg mixture.
- Stir in cheese and bacon.
- In a greased baking dish, layer hash browns evenly.
- Pour egg mixture over the hash browns.
- Bake for 30-35 minutes, until set and golden.
- Garnish with fresh herbs before serving.
