Description

Ingredients

  • 200g dark chocolate
  • 100ml heavy cream
  • 50g raspberry puree
  • 2 tbsp unsalted butter
  • Cocoa powder for dusting

Instructions

  1. Chop the dark chocolate into small pieces and place in a heatproof bowl.
  2. Heat the heavy cream in a saucepan until it just begins to simmer.
  3. Pour the hot cream over the chocolate and let it sit for 1-2 minutes.
  4. Stir the mixture until the chocolate is completely melted and smooth.
  5. Add the raspberry puree and butter, stirring until well combined.
  6. Cover the mixture and refrigerate for at least 2 hours until firm.
  7. Using a spoon or a melon baller, scoop out small portions of the mixture and roll them into balls.
  8. Dust the truffles with cocoa powder before serving.
