- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup granulated sugar
- 1/3 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup strong brewed coffee, cooled
- 1/2 cup milk
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp instant coffee granules
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- Whisk together flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
- In another bowl, mix sugar, oil, egg, and vanilla until smooth.
- Alternate adding the dry ingredients and coffee-milk mixture to the wet ingredients, mixing well.
- Pour batter into cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely.
- Whip heavy cream, powdered sugar, and instant coffee until stiff peaks form.
- Pipe or spread the coffee cream on cooled cupcakes.
Notes
- Use room-temperature ingredients for even mixing.
- Do not overmix the batter to avoid dense cupcakes.
