Ingredients

  • 2 boneless, skinless chicken fillets
  • 1 cup fresh parsley, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp red wine vinegar
  • 1/4 cup olive oil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. Preheat grill to medium-high heat.
  2. Season chicken fillets with salt and black pepper, then grill for 6-7 minutes per side until fully cooked.
  3. In a bowl, mix parsley, garlic, red wine vinegar, olive oil, oregano, red pepper flakes, salt, and black pepper to make chimichurri sauce.
  4. Slice grilled chicken into strips.
  5. Assemble bowls with cooked quinoa, sliced chicken, avocado, cherry tomatoes, and feta cheese.
  6. Drizzle chimichurri sauce over the top and serve.

Notes

  • For extra flavor, marinate the chicken in half of the chimichurri sauce for 30 minutes before grilling.
  • Replace quinoa with brown rice or couscous if preferred.
  • Store leftover chimichurri sauce in the fridge for up to 3 days.
