Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup diced red onion
  • 1/4 cup crumbled feta cheese

Instructions

  1. In a bowl, mix olive oil, red wine vinegar, parsley, garlic, red pepper flakes, salt, and black pepper to make the chimichurri sauce.
  2. Marinate the chicken in half of the chimichurri sauce for at least 30 minutes.
  3. Preheat the grill to medium-high heat and cook the chicken for 6-7 minutes per side until fully cooked.
  4. Slice the chicken into strips.
  5. Assemble the bowl with quinoa, cherry tomatoes, red onion, and feta cheese.
  6. Top with sliced chicken and drizzle with remaining chimichurri sauce.
