Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup beef broth
  • 1 tbsp olive oil
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  2. Add the ground beef to the pot and cook until browned, breaking it apart with a spoon.
  3. Stir in the chili powder, cumin, paprika, salt, and black pepper. Cook for another minute to toast the spices.
  4. Add the crushed tomatoes, kidney beans, black beans, and beef broth to the pot. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for at least 30 minutes, stirring occasionally.
  6. Taste and adjust seasoning as needed. If the chili is too thick, add more beef broth to reach desired consistency.
  7. Serve hot, topped with your favorite toppings.

Notes

  • For a spicier chili, add diced jalapeños or a dash of cayenne pepper.
  • This chili can be made ahead of time and tastes even better the next day.
  • Store leftovers in an airtight container in the fridge for up to 3 days or in the freezer for up to 3 months.
