- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup beef broth
- 1 tbsp olive oil
- Optional toppings: shredded cheese, sour cream, chopped green onions
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the ground beef to the pot and cook until browned, breaking it apart with a spoon.
- Stir in the chili powder, cumin, paprika, salt, and black pepper. Cook for another minute to toast the spices.
- Add the crushed tomatoes, kidney beans, black beans, and beef broth to the pot. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for at least 30 minutes, stirring occasionally.
- Taste and adjust seasoning as needed. If the chili is too thick, add more beef broth to reach desired consistency.
- Serve hot, topped with your favorite toppings.
Notes
- For a spicier chili, add diced jalapeños or a dash of cayenne pepper.
- This chili can be made ahead of time and tastes even better the next day.
- Store leftovers in an airtight container in the fridge for up to 3 days or in the freezer for up to 3 months.
