A simple and hearty chili beans recipe.

- 2 cups of dried beans
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 2 cups of vegetable broth
- 2 tablespoons of chili powder
- 1 teaspoon of cumin
- 1 can of diced tomatoes
- Salt to taste
Instructions
- Soak the dried beans overnight in water.
- Drain and rinse the beans.
- In a pot, sauté onion, garlic, and bell pepper until soft.
- Add the soaked beans, vegetable broth, chili powder, cumin, and diced tomatoes.
- Bring to a boil, then reduce heat and simmer for 1-2 hours until beans are tender.
- Add salt to taste before serving.

- Serve with rice or bread.
