- 2 medium sweet potatoes, peeled and diced
- 1 ripe avocado
- 1/4 cup plain yogurt
- 1 lime, juiced
- 1 clove garlic, minced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, salt, pepper, and paprika. Roast for 25 minutes.
- Season chicken with salt and pepper. Pan-fry over medium heat for 6-7 minutes per side.
- Blend avocado, yogurt, lime juice, and garlic until smooth.
- Slice chicken and serve with roasted sweet potatoes and avocado sauce.
Notes
- For extra flavor, add a pinch of cumin to the sweet potatoes.
- Replace yogurt with coconut milk for a dairy-free option.
