Ingredients

  • 2 boneless, skinless chicken
  • 1 cup sliced mushrooms
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a pan over medium heat. Cook chicken until golden, about 5 minutes per side. Remove and set aside.
  3. In the same pan, melt butter and sauté garlic for 30 seconds.
  4. Add mushrooms and thyme. Cook until mushrooms soften.
  5. Pour in chicken broth and scrape up any browned bits.
  6. Stir in heavy cream and simmer for 3 minutes.
  7. Return chicken to the pan and cook for another 5 minutes, until heated through.
  8. Serve hot.
