Ingredients

  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 package (9 oz) refrigerated cheese tortellini
  • 1 cup spinach, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
  2. Stir in carrots and celery, cooking for another 5 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the shredded chicken, tortellini, spinach, basil, oregano, and seasoning. Cook until tortellini is tender, about 5-7 minutes.
  5. Serve hot, garnished with Parmesan cheese.
