- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 package (9 oz) refrigerated cheese tortellini
- 1 cup spinach, chopped
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Parmesan cheese, for serving
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
- Stir in carrots and celery, cooking for another 5 minutes.
- Pour in the chicken broth and bring to a boil.
- Add the shredded chicken, tortellini, spinach, basil, oregano, and seasoning. Cook until tortellini is tender, about 5-7 minutes.
- Serve hot, garnished with Parmesan cheese.
Notes
- You can use leftover roast chicken for a quicker option.
- Feel free to add additional vegetables like peas or zucchini.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
