- 4 bone-in, skin-on chicken thighs
- 1/2 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chicken broth
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken thighs with salt, pepper, and oregano.
- Heat olive oil in an oven-safe skillet over medium heat.
- Sear chicken thighs skin-side down for 5 minutes until golden.
- Flip chicken and add garlic, sun-dried tomatoes, and chicken broth.
- Transfer skillet to the oven and bake for 25 minutes.
- Garnish with fresh parsley before serving.

- Use jarred sun-dried tomatoes in oil for extra flavor.
- Adjust seasoning to taste.
