  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken thighs with salt and pepper on both sides.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken thighs skin-side down and sear until golden brown, about 5-7 minutes.
  4. Flip the chicken thighs and add the butter, garlic, thyme, and rosemary to the skillet. Squeeze the lemon juice over the chicken.
  5. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Remove from the oven and let rest for a few minutes. Garnish with fresh parsley before serving.
