- 4 bone-in, skin-on chicken thighs
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 5 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken thighs with salt and pepper on both sides.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken thighs skin-side down and sear until golden brown, about 5-7 minutes.
- Flip the chicken thighs and add the butter, garlic, thyme, and rosemary to the skillet. Squeeze the lemon juice over the chicken.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let rest for a few minutes. Garnish with fresh parsley before serving.
