- 8 ounces spaghetti or linguine
- 2 cups cooked chicken, shredded
- 1 cup sliced mushrooms
- 1/2 cup diced onion
- 1/2 cup diced green bell pepper
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onions, bell peppers, and garlic. Sauté until onions are translucent.
- Add the mushrooms and cook for an additional 3-4 minutes until softened.
- Stir in the cooked chicken, chicken broth, heavy cream, Parmesan cheese, thyme, salt, and pepper. Bring to a simmer and cook for 5 minutes.
- Combine the cooked pasta with the chicken mixture and stir well to combine.
- Transfer the mixture to a greased 9×13 inch baking dish. Top with shredded mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from oven and let cool for a few minutes. Garnish with fresh parsley before serving.
