  • 8 ounces spaghetti or linguine
  • 2 cups cooked chicken, shredded
  • 1 cup sliced mushrooms
  • 1/2 cup diced onion
  • 1/2 cup diced green bell pepper
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onions, bell peppers, and garlic. Sauté until onions are translucent.
  4. Add the mushrooms and cook for an additional 3-4 minutes until softened.
  5. Stir in the cooked chicken, chicken broth, heavy cream, Parmesan cheese, thyme, salt, and pepper. Bring to a simmer and cook for 5 minutes.
  6. Combine the cooked pasta with the chicken mixture and stir well to combine.
  7. Transfer the mixture to a greased 9×13 inch baking dish. Top with shredded mozzarella cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Remove from oven and let cool for a few minutes. Garnish with fresh parsley before serving.
