  • 1/4 cup (60ml) mirin (sweet rice wine)
  • 1/4 cup (50g) brown sugar
  • 2 tablespoons (30ml) sake (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons vegetable oil
  • Sesame seeds and green onions for garnish
  • Cooked rice or noodles for serving

Instructions

  1. In a bowl, whisk together soy sauce, mirin, brown sugar, sake (if using), garlic, and ginger. Set aside.
  2. In a large skillet, heat vegetable oil over medium-high heat. Add chicken and cook until browned and cooked through, about 6-7 minutes per side. Remove chicken from skillet and set aside.
  3. Pour the teriyaki sauce mixture into the same skillet. Bring to a simmer and let cook for 2-3 minutes.
  4. In a small bowl, mix cornstarch and water to create a slurry. Add to the simmering sauce and stir until thickened, about 1-2 minutes.
  5. Return the chicken to the skillet, coating it with the teriyaki sauce. Cook for an additional minute to heat through.
  6. Serve the chicken teriyaki over cooked rice or noodles, garnished with sesame seeds and chopped green onions.

Notes

  • For a spicier version, add a dash of red pepper flakes to the sauce.
  • If you prefer a thicker sauce, increase the amount of cornstarch.
