Delicious homemade chicken teriyaki with a savory-sweet sauce, perfectly cooked chicken, and served over rice or noodles.

- 1 lb (450g) boneless, skinless chicken thighs or breasts
- 1/2 cup (120ml) soy sauce
- 1/4 cup (60ml) mirin (sweet rice wine)
- 1/4 cup (50g) brown sugar
- 2 tablespoons (30ml) sake (optional)
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 tablespoons vegetable oil
- Sesame seeds and green onions for garnish
- Cooked rice or noodles for serving
Instructions
- In a bowl, whisk together soy sauce, mirin, brown sugar, sake (if using), garlic, and ginger. Set aside.
- In a large skillet, heat vegetable oil over medium-high heat. Add chicken and cook until browned and cooked through, about 6-7 minutes per side. Remove chicken from skillet and set aside.
- Pour the teriyaki sauce mixture into the same skillet. Bring to a simmer and let cook for 2-3 minutes.
- In a small bowl, mix cornstarch and water to create a slurry. Add to the simmering sauce and stir until thickened, about 1-2 minutes.
- Return the chicken to the skillet, coating it with the teriyaki sauce. Cook for an additional minute to heat through.
- Serve the chicken teriyaki over cooked rice or noodles, garnished with sesame seeds and chopped green onions.
Notes
- For a spicier version, add a dash of red pepper flakes to the sauce.
- If you prefer a thicker sauce, increase the amount of cornstarch.
- Feel free to add vegetables like broccoli, bell peppers, or carrots to the skillet for a complete meal.
