Ingredients

- 1 lb chicken breast, cooked and shredded
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup bell pepper, chopped
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, sauté onion, garlic, and bell pepper until soft.
- Add shredded chicken, black beans, corn, diced tomatoes, and taco seasoning.
- Pour in chicken broth and mix well.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper.
- Serve hot.
Notes
- Top with cheese and tortilla chips if desired.
- You can use leftover chicken for quicker preparation.
