Ingredients

- 2 boneless, skinless chicken breasts
- 2 medium sweet potatoes, diced
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced sweet potatoes with olive oil, salt, pepper, garlic powder, and paprika.
- Spread sweet potatoes on a baking sheet.
- Season chicken breasts with salt, pepper, garlic powder, and paprika.
- Place chicken on the same baking sheet.
- Bake for 25-30 minutes or until chicken reaches 165°F (74°C) and sweet potatoes are tender.
- Let cool and divide into meal prep containers.

- Store in airtight containers for up to 4 days.
- Reheat in microwave for 1-2 minutes.
