Ingredients

  • 2 pounds chicken breasts
  • 6 cups chicken broth
  • 2 cups carrots, sliced
  • 2 cups celery, chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 2 bay leaves

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add chicken broth, carrots, celery, onion, garlic, thyme, rosemary, salt, pepper, and bay leaves.
  3. Cover and cook on low for 6-8 hours or high for 4 hours.
  4. Remove chicken, shred it, and return to the soup.
  5. Discard bay leaves before serving.

  • Add noodles or rice for a heartier soup.
  • Store leftovers in the fridge for up to 3 days.
