Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • Wooden or metal skewers

Instructions

  1. In a large bowl, whisk together olive oil, soy sauce, lemon juice, garlic, paprika, cumin, salt, pepper, and oregano to create the marinade.
  2. Add the chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning on the grill.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken onto the skewers, leaving a little space between each piece.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove from the grill and let rest for a few minutes before serving.

Notes

  • You can add vegetables such as bell peppers, onions, or zucchini to the skewers for extra flavor and nutrition.
