A delicious and easy chicken shawarma recipe that brings the flavors of the Middle East to your kitchen. This dish features marinated chicken cooked to perfection and served with fresh vegetables and a creamy garlic sauce.

- 1.5 lbs boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon ground paprika
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 4 pita breads or flatbreads
- 1 cup lettuce, shredded
- 1 cup tomatoes, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup cucumber, diced
- 1/2 cup tahini or garlic sauce for serving
Instructions
- In a large bowl, combine olive oil, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, salt, and pepper.
- Add the chicken thighs to the bowl and toss to coat evenly with the marinade. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
- Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and cook until golden brown and cooked through, about 5-7 minutes per side.
- Once cooked, let the chicken rest for a few minutes before slicing it thinly.
- Warm the pita or flatbreads on the grill for a minute or two.
- Assemble the shawarma by placing sliced chicken on the bread and topping with lettuce, tomatoes, red onion, cucumber, and tahini or garlic sauce.
- Roll the pita around the fillings and serve immediately.
Notes
- You can customize the toppings to your liking, adding pickles or olives for extra flavor.
- Serve with a side of hummus or tabbouleh for a complete meal.
