- 2 lbs boneless, skinless chicken thighs
- 1/4 cup olive oil
- 1/4 cup plain yogurt
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground paprika
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- Pita bread or flatbreads for serving
- Toppings: sliced tomatoes, cucumbers, red onion, lettuce, and tahini sauce
Instructions
- In a large bowl, combine olive oil, yogurt, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne, salt, and pepper. Mix until well combined.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat your grill or a large skillet over medium-high heat. Remove chicken from the marinade, allowing excess to drip off.
- Cook the chicken for about 5-7 minutes on each side, until fully cooked and internal temperature reaches 165°F (75°C).
- Once cooked, remove the chicken from the grill or skillet and let it rest for 5 minutes before slicing it thinly.
- Serve the sliced chicken in pita bread or flatbreads with your choice of toppings.
