Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Cook rice in chicken broth according to package instructions.
  2. Heat olive oil in a pan over medium-high heat.
  3. Season chicken with salt and pepper, then cook until golden and cooked through (5-6 minutes per side).
  4. Remove chicken and set aside.
  5. In the same pan, melt butter and sauté garlic for 1 minute.
  6. Add cooked rice, parmesan cheese, and red pepper flakes (if using). Stir well.
  7. Serve chicken over garlic parmesan rice and garnish with parsley.

Notes

  • For a richer flavor, use freshly grated parmesan.
  • Adjust red pepper flakes to taste for more or less spice.
