Ingredients

- 2 boneless, skinless chicken breasts, sliced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 4 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 1 tbsp fresh parsley, chopped
Instructions
- Cook rice in chicken broth according to package instructions.
- Heat olive oil in a pan over medium-high heat.
- Season chicken with salt and pepper, then cook until golden and cooked through (5-6 minutes per side).
- Remove chicken and set aside.
- In the same pan, melt butter and sauté garlic for 1 minute.
- Add cooked rice, parmesan cheese, and red pepper flakes (if using). Stir well.
- Serve chicken over garlic parmesan rice and garnish with parsley.
Notes
- For a richer flavor, use freshly grated parmesan.
- Adjust red pepper flakes to taste for more or less spice.
- Leftovers can be stored in the fridge for up to 3 days.
