A delicious and creamy dish featuring tender chicken scampi served over garlic parmesan rice.
Ingredients

- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tablespoon butter
- Salt and pepper to taste
- 1 tablespoon chopped parsley for garnish
Instructions
- Cook the rice in chicken broth according to package instructions. Set aside.
- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through. Remove and set aside.
- In the same skillet, add butter and minced garlic. Sauté until fragrant.
- Pour in heavy cream and bring to a simmer. Stir in parmesan cheese until melted and smooth.
- Slice the cooked chicken and return it to the skillet. Coat with the creamy garlic sauce.
- Serve the chicken scampi over the prepared garlic parmesan rice. Garnish with chopped parsley.
Notes
- Use freshly grated parmesan for the best flavor.
- Adjust the creaminess by adding more or less heavy cream.
- Pair with a fresh salad or steamed vegetables for a complete meal.
