Description

A delicious and creamy dish featuring tender chicken scampi served over garlic parmesan rice.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tablespoon butter
  • Salt and pepper to taste
  • 1 tablespoon chopped parsley for garnish

Instructions

  1. Cook the rice in chicken broth according to package instructions. Set aside.
  2. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through. Remove and set aside.
  3. In the same skillet, add butter and minced garlic. Sauté until fragrant.
  4. Pour in heavy cream and bring to a simmer. Stir in parmesan cheese until melted and smooth.
  5. Slice the cooked chicken and return it to the skillet. Coat with the creamy garlic sauce.
  6. Serve the chicken scampi over the prepared garlic parmesan rice. Garnish with chopped parsley.
