Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated parmesan cheese
- 3 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped parsley
Instructions
- Heat olive oil in a skillet over medium heat. Cook chicken until golden brown and fully cooked, about 6-7 minutes per side. Set aside.
- In the same skillet, melt butter and sauté garlic until fragrant, about 30 seconds.
- Add rice and stir to coat with butter and garlic. Cook for 1 minute.
- Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
- Stir in heavy cream and parmesan cheese. Cook for 2 more minutes until creamy.
- Slice cooked chicken and place on top of the rice. Garnish with parsley.
Notes
- Use freshly grated parmesan for best flavor.
- Adjust salt to taste if using low-sodium broth.
- For extra richness, add 1/4 cup more cream.
