- 8 oz pasta (penne or fusilli)
- 4 chicken sausages, sliced
- 2 medium zucchinis, diced
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large pan over medium heat. Add sliced sausages and cook until browned, about 5 minutes.
- Add zucchini and cook for 3-4 minutes until slightly softened.
- Stir in cherry tomatoes, garlic, oregano, salt, and pepper. Cook for another 2-3 minutes.
- Add cooked pasta to the pan and toss everything together.
- Garnish with Parmesan cheese and fresh basil before serving.
