Ingredients

- 2 cups cooked chicken, shredded
- 1/2 cup mayonnaise
- 1/4 cup celery, chopped
- 1/4 cup red onion, chopped
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- 4 slices of bread
- Leafy greens (optional)
Instructions
- In a bowl, combine shredded chicken, mayonnaise, celery, red onion, and Dijon mustard.
- Mix well and season with salt and pepper.
- Spread the chicken mixture evenly on two slices of bread.
- Add leafy greens if desired.
- Top with the remaining slices of bread.
- Cut the sandwiches in half and serve.
