Ingredients

  • 1 whole chicken, cut into pieces
  • 2 cups jasmine rice
  • 4 cups chicken broth
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Sliced cucumber and cilantro for garnish

Instructions

  1. In a large pot, bring chicken broth to a boil. Add ginger and garlic.
  2. Add chicken pieces to the pot, reduce heat to low, and simmer for 30-40 minutes until cooked through.
  3. Remove chicken from broth and set aside. Reserve broth for cooking rice.
  4. In another pot, rinse jasmine rice under cold water until water runs clear. Drain well.
  5. Add 2 cups of reserved chicken broth to the rice pot. Cook rice according to package instructions.
  6. While rice is cooking, heat sesame oil in a pan over medium heat. Add soy sauce, salt, and pepper.
  7. Once chicken is cool enough to handle, shred or slice the meat.
  8. Serve the rice on a plate, topped with chicken, and drizzle with the soy sauce mixture.
  9. Garnish with sliced cucumber and cilantro.
