- 1 whole chicken, cut into pieces
- 2 cups jasmine rice
- 4 cups chicken broth
- 4 cloves garlic, minced
- 1 thumb-sized piece of ginger, sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Sliced cucumber and cilantro for garnish
Instructions
- In a large pot, bring chicken broth to a boil. Add ginger and garlic.
- Add chicken pieces to the pot, reduce heat to low, and simmer for 30-40 minutes until cooked through.
- Remove chicken from broth and set aside. Reserve broth for cooking rice.
- In another pot, rinse jasmine rice under cold water until water runs clear. Drain well.
- Add 2 cups of reserved chicken broth to the rice pot. Cook rice according to package instructions.
- While rice is cooking, heat sesame oil in a pan over medium heat. Add soy sauce, salt, and pepper.
- Once chicken is cool enough to handle, shred or slice the meat.
- Serve the rice on a plate, topped with chicken, and drizzle with the soy sauce mixture.
- Garnish with sliced cucumber and cilantro.
