- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, sliced
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1/4 cup chicken broth
- 2 tablespoons oyster sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Cooked rice, for serving
Instructions
- In a bowl, combine chicken pieces with soy sauce and cornstarch. Mix well and let it marinate for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Stir in bell pepper, broccoli, and carrot. Cook for 3-4 minutes until vegetables are tender-crisp.
- Add garlic and ginger to the skillet and cook for another minute until fragrant.
- Return the cooked chicken to the skillet. Pour in chicken broth and oyster sauce, stirring to combine. Cook for an additional 2-3 minutes until heated through.
- Drizzle sesame oil over the stir fry and season with salt and pepper to taste.
- Serve hot over cooked rice.
