Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1/4 cup chicken broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. In a bowl, combine chicken pieces with soy sauce and cornstarch. Mix well and let it marinate for 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Stir in bell pepper, broccoli, and carrot. Cook for 3-4 minutes until vegetables are tender-crisp.
  4. Add garlic and ginger to the skillet and cook for another minute until fragrant.
  5. Return the cooked chicken to the skillet. Pour in chicken broth and oyster sauce, stirring to combine. Cook for an additional 2-3 minutes until heated through.
  6. Drizzle sesame oil over the stir fry and season with salt and pepper to taste.
  7. Serve hot over cooked rice.
