- 2 cups cooked chicken, diced
- 1 cup carrots, diced
- 1 cup peas
- 1 cup potatoes, diced
- 1/2 cup onion, chopped
- 1/3 cup butter
- 1/3 cup all-purpose flour
- 1 3/4 cups chicken broth
- 2/3 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 1 pie crust
Instructions
- Preheat oven to 425°F (220°C).
- In a saucepan, melt butter over medium heat.
- Add onions and cook until translucent.
- Stir in flour to create a roux.
- Gradually add chicken broth and milk, stirring constantly.
- Bring to a boil until thickened.
- Add chicken, carrots, peas, potatoes, salt, pepper, and thyme.
- Pour mixture into a pie crust.
- Cover with another pie crust and seal edges.
- Cut slits in the top crust for steam to escape.
- Bake for 30-35 minutes or until golden brown.
Notes
- Let it cool for a few minutes before serving.
- Can substitute vegetables based on preference.
- Use pre-cooked rotisserie chicken for convenience.
