Description

Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1 pie crust

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a saucepan, melt butter over medium heat.
  3. Add onions and cook until translucent.
  4. Stir in flour to create a roux.
  5. Gradually add chicken broth and milk, stirring constantly.
  6. Bring to a boil until thickened.
  7. Add chicken, carrots, peas, potatoes, salt, pepper, and thyme.
  8. Pour mixture into a pie crust.
  9. Cover with another pie crust and seal edges.
  10. Cut slits in the top crust for steam to escape.
  11. Bake for 30-35 minutes or until golden brown.

Notes

  • Let it cool for a few minutes before serving.
  • Can substitute vegetables based on preference.
  • Use pre-cooked rotisserie chicken for convenience.
