- 2 boneless, skinless chicken breasts
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Flatten the chicken breasts to an even thickness.
- Season with salt and pepper.
- Dredge the chicken in flour, shaking off excess.
- Heat olive oil and butter in a skillet over medium-high heat.
- Add chicken and cook until golden brown, about 4-5 minutes per side.
- Remove chicken and set aside.
- Add chicken broth, lemon juice, and capers to the skillet.
- Bring to a simmer, scraping up any browned bits.
- Add chicken back to the skillet and simmer for 5 minutes.
- Garnish with fresh parsley before serving.
