Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse under cold water until cooled.
  2. In a large bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, and red onion.
  3. In a separate bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, garlic powder, salt, and pepper until smooth.
  4. Pour the dressing over the pasta salad and toss gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with fresh parsley before serving.
