- 8 ounces rotini or penne pasta
- 2 cups cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1/2 cup Greek yogurt
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water until cooled.
- In a large bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, and red onion.
- In a separate bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the pasta salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add other vegetables such as bell peppers or carrots for added crunch.
- This salad can be made a day ahead for meal prep and stored in the refrigerator.
