Ingredients

  • 1 lb (450g) boneless, skinless chicken thighs or breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup (200g) orzo pasta
  • 4 cups (960ml) chicken broth
  • 1 cup (150g) diced tomatoes (canned or fresh)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Parmesan cheese, grated (for serving, optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Season the chicken with salt and pepper, then add it to the pot. Brown the chicken on both sides, about 5-7 minutes.
  4. Stir in the orzo, chicken broth, diced tomatoes, oregano, and basil. Bring to a boil.
  5. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the orzo is tender and the chicken is cooked through.
  6. Remove the chicken from the pot, shred or dice it, and return it to the pot. Stir to combine.
  7. Taste and adjust seasoning with salt and pepper if necessary.
  8. Serve hot, garnished with fresh parsley and grated Parmesan cheese if desired.

Notes

  • For added flavor, consider adding some spinach or kale in the last few minutes of cooking.
  • This dish can be made ahead of time and reheated, but the orzo may absorb some broth, so you might need to add a splash of water or broth when reheating.
