- 1 lb (450g) boneless, skinless chicken thighs or breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup (200g) orzo pasta
- 4 cups (960ml) chicken broth
- 1 cup (150g) diced tomatoes (canned or fresh)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Parmesan cheese, grated (for serving, optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Season the chicken with salt and pepper, then add it to the pot. Brown the chicken on both sides, about 5-7 minutes.
- Stir in the orzo, chicken broth, diced tomatoes, oregano, and basil. Bring to a boil.
- Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the orzo is tender and the chicken is cooked through.
- Remove the chicken from the pot, shred or dice it, and return it to the pot. Stir to combine.
- Taste and adjust seasoning with salt and pepper if necessary.
- Serve hot, garnished with fresh parsley and grated Parmesan cheese if desired.
Notes
- For added flavor, consider adding some spinach or kale in the last few minutes of cooking.
- This dish can be made ahead of time and reheated, but the orzo may absorb some broth, so you might need to add a splash of water or broth when reheating.
