Description

A comforting chicken noodle soup made easy with rotisserie chicken.


Ingredients

  • 1 rotisserie chicken, shredded
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add onion, garlic, carrots, and celery. Sauté until soft.
  3. Pour in chicken broth and bring to a boil.
  4. Add egg noodles and cook according to package instructions.
  5. Add shredded rotisserie chicken and thyme.
  6. Season with salt and pepper.
  7. Simmer for 5 minutes. Serve hot.

Notes

  • Store leftovers in the fridge for up to 3 days.
  • This soup freezes well; just leave out the noodles if freezing.
