Description
A comforting chicken noodle soup with egg noodles.
Ingredients

- 2 cups cooked chicken, shredded
- 6 cups chicken broth
- 1 cup egg noodles
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add onion, carrots, celery, and garlic. Sauté until soft.
- Pour in chicken broth and bring to a boil.
- Add egg noodles and cook until tender.
- Add shredded chicken, thyme, bay leaf, salt, and pepper.
- Simmer for 10 minutes. Remove bay leaf before serving.
Notes
- Adjust seasoning to taste.
- Use rotisserie chicken for convenience.
